Chocolate Chip Cookies

Ingredients:

2 tbsp ground flax seed meal*
6 tbsp water
1 cup softened vegan butter (I used Miyoko’s)
1 cup white sugar
1 cup brown sugar (packed)
2 tsp vanilla extract
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
3 cups flour
1/2 tsp cinnamon
2 cups vegan chocolate chips

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

Mix ground flax seed meal and water together in a small bowl. Set aside for 5 minutes.

Mix butter and both sugars in a large bowl until smooth. Add the flax egg and vanilla and continue to mix until thoroughly combined.

Dissolve the baking soda in hot water. Add to dough with the salt. Combine well.

Then add the flour gradually, one cup at a time (so as not to make a mess). Add in the cinnamon and chocolate chips.

Stir so that the chocolate chips are distributed evenly. Spoon out dough (about half the size of an ice cream scoop) onto the baking sheet.

Bake for 10 minutes. Cookies will still look soft, but trust me they are cooked perfectly. Let cool and they will harden, creating a perfectly soft and chewy experience. Any longer will result in too hard of cookies! Enjoy!

*Can be purchased at Trader Joe’s or Whole Foods. Probably other common stores as well!
