Savory Oatmeal Bowl

Ingredients

1 clove garlic, finely chopped
1/4 cup red onion, chopped
1/2 tsp cumin
1/4 tsp smoked paprika
salt + pepper
1 cup oats
1 1/2 cups water or vegetable broth
small handful of kale

Additional Toppings: jammy egg, hummus, pesto, chili oil, radish, green onion, cilantro, greens

Heat oil in a medium/small pot. Add the garlic and half of the red onion and sauté for 3-4 minutes. Add in the paprika, cumin and salt and pepper. Mix all together and then add the oats, continuously mixing. Add in the water or broth and bring to a boil. In a pan, heat olive oil and add the rest of the red onion and a handful of kale. Salt and pepper and sauté until kale is nice and tender. Back to the oatmeal, bring the mixture down to a simmer and stir continuously until it becomes nice gooey. Add more salt and pepper to taste. Top with the sautéed kale other goodies!

TIP: to make the bowl even more healthy, sub out half a cup of oatmeal with cooked quinoa. This is great if you have extra quinoa in your fridge or want to “beef” up the recipe. Cook the half cup of oats by the recipe then stir in the cooked quinoa.
